Onion ring is the whole shape - here the central ring surrounded by two ring looking chains, concentrically.
CW join is the special stitch join at the top of each of the rings, utilized to keep the smooth continuity of the chains preserved, instead of using a simple lock stitch which would show, and break the consistent line of the chain making up the circle . Fox : )
